Peruvian cuisine is usually considered one of the most diverse in the world and is on par with French, Chinese and Indian cuisine. In January 2004, The Economist said that “Peru can lay claim to one of the world’s dozen or so great cuisines” [1], while at the Fourth International Summit of Gastronomy Madrid Fusión 2006, regarded as the world’s most important gastronomic forum, held in Spain between January 17th and 19th, Lima was declared the “Gastronomic Capital of the Americas” .

Thanks to its pre-Inca and Inca heritage and to Spanish, Basque, African, Sino-Cantonese, Japanese and finally Italian immigration (mainly throughout the 19th century), Peruvian cuisine combines the flavors of four continents. With the eclectic variety of traditional dishes, the Peruvian culinary arts are in constant evolution, and impossible to list in their entirety. Suffice it to mention that along the Peruvian coast alone there are more than two thousand different types of soups, and that there are more than 250 traditional desserts.

There are many restaurants specializing in Peruvian cuisine in many different cities throughout the world.

The great variety in Peruvian cuisine stems from three major influences:

* Peru’s unique geography, 84 of the 104 possible life zones according to Holdridge
* Peru’s openness and blending of distinct races and cultures

The fall chill was dispelled in DUMBO yesterday by the raging grills at the 2008 Vendy Awards. The highlight of this year’s competition was a new category for dessert trucks. Wafels and Dinges didn’t show, but artisanal-ice-cream guy Ben Van Leeuwen battled the Treats Truck and Dessert Truck for bragging rights. Grub Street’s Alexandra Vallis was on hand to speak to some of the competitors, question decisions by judges Eater X and Calvin Trillin, and see who took home street food’s highest honor.

Learn Dave and Roger’s Pickle Call at Guss’ Pickles (Orchard Street between Broome & Grand, Lower East Side, Manhattan) as you nosh on 6 varieties of pickles. If you’re lucky Dave will introduce you to the best skin care product known to man, pickle brine. Go-raksya means protection to the cows. Instead of protection to the cows, they are killing the cows. How you can have perfect society? Cows must be protected. It is so important animal. It is giving the nectarean food milk, and from milk, you can save your children, you can save your diseased persons. And how it is that you take the cow’s milk and send it for slaughterhouse. Oh, this is not, not at all human civilization. Here it is said go-raksya. You should give all protection to this important animal. Krsna does not say that you should protect the pigs and hogs or other animals. He especially meant the cows because cow is very important animal to the human society. If there are meat-eaters, they can kill other animals, but they should not kill the cow. This is, if you want actually perfect society. Krsi-go-raksya-vanijyam. And these persons, they let them produce enough food grains, and where there is no, there is scarcity of food grain, let them supply there. That is called trade. Vanijyam. Vanijyam.
But at the present moment, there are so many countries, they can produce profuse quantity of food grain. Sometimes they do it and throw it in the ocean for what is called, economic balance. This is not good. Everyone should produce enough quantity of food grains, and if there is shortage, they should send there. In this way, the whole world should cooperate. There is United Nations, but what they are doing? Let them study Bhagavad-gita, how to make United Nations. That will be perfect. Not these short-sighted men, with politics and diplomacy in the heart, they can brain all the nations united. That is not possible. Let them discuss Bhagavad-gita. Let them discuss how perfect society can be established. Then there will be peace. And vaisya-karma svabhava-jam.
